Grilled Hoisin Chicken Sausage and Roasted Bell Pepper Pizza
Episode 813: Hoisin & Pizza Dough
Serves 4
Ingredients
1 pound loose Italian chicken sausage
1 large yellow onion, sliced thinly
1 tablespoon garlic, minced
1/4 cup Hoisin sauce
2 cups drained chopped Napoli tomatoes
2 pizza rounds, ½ inch thick (from about 1# pizza dough)
3 red bell peppers, charred, bagged, peeled, de-seeded, sliced
1 cup shredded provolone cheese
½ bunch basil, picked, and chiffonade
Canola oil for cooking
Extra virgin olive oil for cooking and drizzling
Kosher salt and freshly ground black pepper to taste
Directions
Pre-heat a grill on medium heat. In a saute pan coated lightly very lightly with oil, saute chicken sausage, breaking it up as it cooks. Add sliced onion and cook for 8 minutes or until sausage is cooked through. Set aside, drain fat from pan and wipe clean. Coat pan again with oil and sauté the garlic and Hoisin sauce. Add the tomatoes and cook to reduce the liquid about 5 to 7 minutes. Check for flavor and season, if necessary. Meanwhile, lightly oil both pizza rounds on one side and season. Grill one side until golden, brown and delicious, lightly oil other side, flip and grill the other until lightly tan. Place lighter side down and sauce the pizza, add chicken sausage/onion mixture, red bell peppers, provolone cheese and drizzle with extra virgin olive oil. Place back on grill on low heat and grill until cheese has melted. When done, garnish with basil and drizzle with extra virgin olive oil. Slice and serve.
