Tony Maws' Grilled Chicken Wings with Tofu-Lemon Marinade, Grilled Lemon and Parsley Salad
Serves 4
Ingredients
Grilled Chicken Wings with Tofu-Lemon Marinade:
2 lbs all natural chicken wings, one piece with tips removed
8 oz silken tofu
1 oz white soy sauce
3 tablespoons of sesame oil
2 cloves garlic
2 ounces of soy milk
1 1/2 oz fresh lemon juice
1/4 seeded jalapeno
2 teaspoons of sea salt
4 large sprigs Italian flat leaf parsley
1 tablespoon fresh ginger, grated
Kosher Salt
Olive Oil for grilling
Grilled Lemon & Parsley Salad:
4 Meyer lemons (if available or lemons) sliced thin on a mandolin.
1 cup kosher salt
1 cup white sugar
2 tablespoons of extra-virgin olive oil plus extra for grilling
1/4 cup of fresh lemon juice
1/2 cup of parsley chopped
Kosher Salt and black pepper to taste
Directions
Grilled Chicken Wings with Tofu-Lemon Marinade:
Place all the ingredients except ginger and parsley in a blender, puree until smooth. Add parsley and pulse in until chopped and incorporated. Pour over chicken wings, add ginger and mix. Marinate 8 hours or overnight. Remove chicken from marinade and season with salt. Place on medium hot grill. Cook until charred and cooked through, about 10-12 minutes. Baste with olive oil often. Plate on serving dish with Grilled Lemon and Parsley salad.
Grilled Lemon & Parsley Salad:
In a bowl combine lemons, salt and sugar and combine. Let stand overnight to cure.
Using a strainer and rinse cure off lemons. Toss liberally with olive oil. Grill on medium heat until slightly charred. Remove from grill. Rough chop grilled lemons. In a bowl combine the grilled lemons, parsley leaves, olive oil and fresh lemon juice.
Season with salt and pepper.
