Serves 6 as an hors d'oeuvre
- 1 1/2 pounds cooked lobster meat, cut into medium (1/2-inch) dice
- 1 cup good quality or homemade mayonnaise
- 1/2 ounce fine herbs, chopped (chive, chervil, parsley)
- 1/2 ounce carrots, minced
- 1/2 ounce celery, minced
- 1/2 ounce leek, minced
- 2 tablespoons lemon juice
- 1 green apple, julienned
- Salt and pepper, to taste
- 12 3-inch "taco shell" Honey Sesame Tuiles
In a large bowl, mix the lobster meat with the mayonnaise, fine herbs, carrots, celery, leek, lemon juice and apple. Season the salad with salt and pepper to taste. To serve, spoon a small amount of lobster salad into a Honey Sesame Tuile "taco," place on a platter and serve.
