Serves 4
1 cup mayonnaise (store-bought is fine)
1/2 cup chopped cilantro
1 lemon, juiced
12 slices of cooked bacon
8 slices of toasted whole wheat bread
1 head butter lettuce, leaves separated
2 ripe heirloom tomatoes, sliced
Chips for serving
Kosher salt and freshly ground black pepper to taste
In a bowl, combine the mayo, cilantro and lemon juice and season with salt and
pepper. Spread cilantro mayo on both pieces of bread and layer lettuce, bacon
and tomato. Season the tomatoes, top with second slice of bread, cut in half,
serve with chips, and enjoy!

2004 Palacios As Sortes Valdeorras
100% Godello. An aromatic white grape, one of the oldest in the Iberian
peninsula. Flavors of lime and other citrus give an almost tropical fruit
